Original Recipe serves 2, suitable for sharing among 8 during the Lunar New Year festivities.
Ingredients:
12 Lima Beans (aka: Emperor Beans in Chinese)
2 slices of Cucumber, thinly sliced
150ml Kombu Broth
1g Agar Powder
Ingredients A:
1 teaspoon Japanese Soy Sauce
1 pinch Salt
1 tablespoon Mirin
Sauce:
Wasabi paste
2 teaspoons Japanese Soy Sauce
Instructions:
Roast the emperor beans in the oven at 180°C for 20-30 minutes until the skins crack. Let them cool, then peel off the skins and halve the beans.
Use a vegetable peeler to slice the cucumber lengthwise into two thin slices each. Place them on the edges of circular small bowls (or use hollow ring molds), and place halved emperor beans in the bowl.
Heat the kombu broth and agar powder in a saucepan until boiling. Remove from heat and stir in Ingredients A.
Pour the mixture from step 3 into step 2. Let it cool slightly, then place it in the refrigerator for 30 minutes to set.
Remove from the molds and place in serving dishes. Top with mustard sauce and Japanese soy sauce.
